Smoked Sausage and Black Bean Stew

- 1 medium chopped onion
- 1 medium red bell pepper, seeded, finely chopped
- 3 cloves garlic, minced
- 1 can (14-ounces) diced tomatoes, drained
- 1 can (15-ounces) black beans
- 2 teaspoons chili powder
- hot pepper sauce, optional
- 2 cups hot cooked rice
Directions
Heat the oil in a large skillet or Dutch oven over medium-high heat. Add the sausage and saute 5 minutes or until browned, stirring frequently. Add the onion, red pepper and garlic. Saute 7 minutes or until onions are tender. Add the tomatoes, beans, chili powder, salt, and pepper.
Reduce heat, cover and simmer 10 minutes. Season with salt and pepper, if desired.
Sprinkle with hot sauce, if desired. Serve over hot rice.
