Spice-Seasoned Turkey with Mango Salsa

A sweet-and-spicy seasoning blend is sprinkled on the turkey before baking. Served with a spicy mango salsa.

  1. Preheat oven to 325°F.

  2. Mix chili powder, coriander, brown sugar, ginger, garlic powder, onion powder, 1 teaspoon of the kosher salt, cinnamon, allspice, 1 tsp. of the black pepper and cloves in small bowl; set aside.

  3. Remove neck and giblets from body and neck cavities of turkey; discard or refrigerate for other use. Drain juices from turkey; pat turkey dry with paper towels. Turn wings back to hold down neck skin. Place turkey, breast-side up, on flat rack in shallow roasting pan. Spray turkey evenly with cooking spray; sprinkle with seasoning mixture.

  4. Bake 3-1/2 hours, or until meat thermometer reaches 180°F when inserted deep in thigh, covering breast and top of drumsticks with aluminum foil after 2 hours to prevent overcooking of the breast. Let turkey stand 15 minutes before carving.

  5. Meanwhile, combine mangoes, onions, cilantro, jalapeno pepper, lime juice, oil, remaining 1/4 teaspoon of the salt and 1/8 teaspoon of the pepper in medium bowl. Refrigerate until ready to use. Serve spooned over the turkey slices.
